I didn’t expect to like Gwyneth Paltrow’s cookbook It’s All Good as much as I do. This salad dressing has been the best recipe so far and I can’t stop eating it.
The one ingredient that stands out to me is the white miso paste. It’s the miso paste that gives this salad dressing the flavour of a salad in a Japanese restaurant. It makes my heart sing to be able to report that our local grocery store now carries two types of miso, among many other previously hard-to-find items. Living in a small town has never been better.
Carrot-Ginger Salad Dressing
2 carrots, peeled and roughly chopped
2 shallots, peeled and roughly chopped
¼ cup roughly chopped fresh ginger
2 Tbsp sweet white miso paste
¼ cup rice vinegar
2 Tbsp honey
2 Tbsp toasted sesame oil
½ cup grapeseed oil
¼ cup water
½ tsp coarse sea salt
½ tsp freshly ground black pepper
Puree everything together in a powerful blender until absolutely smooth.
