Roasted New Potatoes with Bacon, Sour Cream & Red Onion Marmalade
1 lb (500 g) new potatoes
2 Tbsp (30 mL) olive oil
Fine sea salt
4 slices bacon, cooked till crisp and finely chopped
¼ cup (60 mL) Provisions Food Company Red Onion Marmalade
Preheat the oven to 400 F (200 C). Line a large baking sheet with parchment paper. Toss the new potatoes with the olive oil and spread on the baking sheet. Sprinkle generously with sea salt. Roast the potatoes for 30-40 minutes or until the potatoes are golden brown and cooked through.
Slice the small cross on the top of each potato and gently squeeze each one to create an opening. Place the potatoes on a serving platter.
Place a small dollop of sour cream on each potato. Sprinkle each potato with the finely chopped bacon.
Warm the red onion marmalade with 1 tsp (5 mL) water over low heat just until soft. Spoon a small amount of red onion marmalade on top of each potato. Serve immediately.
